Vinification

Selection of the right raw material from a privately owned biodynamic vineyard. Fermentation in amphorae with indigenous yeasts without sulphite addition. Completion of alcoholic fermentation and retention in the lees until bottling. 100% recyclable, plant-derived cane mash.
