Vinification

Pre-fermentation maceration for 6 hours at 10°C. Fermented in stainless steel tanks at 15°C. Maturation for a short time with fine lees. 100% recyclable, plant-based, sugar cane lees.

The sum of grapes are being harvested overnight while they are being
crushed / destemmed during dawn. A cold maceration is being carried for 8
hours. A natural sedimentation process takes place after press.

By Cooling juice we delay the alcoholic fermentation and we reach our
fermentation temperature. We separate the clarified juice prior
fermentation with our selected yeast.
